Leopold Bros Absinthe verte . Denver . Co . Trinity Absinthe . Loveland . Co Our Absinthes contain grand wormwood. Grand wormwwod is one of the essential 3 ingredients in Absinthe including anise and fennel. Although all the true absinthe contains these, the addition of other aromatic herbs makes them all different ~ we have structured our selection list starting with the lightest flavored and on up to the strongest most intense anisette flavored absinthe ~ Voilà, Santé de la part de la fée Verte !

Our onion soup is started with lots of Colorado yellow onions from farms around, We start by sautéing the onions until caramelized then we deglaze with a dry white wine and our vegetarian 'roasted spice stock' before serving in a onion soup bowl topped with toasted baguette crostinis, French Raclette & Emmenthal cheese and then baked for a full 20 minutes to let all the ingredients to 'melt' together . Voilà Bon Appétit !
