Raised & influenced by his great grandparents, Chef Patrick says his upbringing was as old as it gets...
"My great grandmother cook everyday and my great grandfather grew the food,
he had a beautiful and very well organized 'Potager'with a little house in the middle,
there was the shade of grapevines everywhere and a bucket in the well for water.
He knew everything about growing and which bugs you needed to keep other bugs away"
Patrick cooks traditional French cuisine, or, as he calls it " Grandmother soul food"
incorporating 'cuisine du terroir' or regional cooking with local produce.

                  I love summer because "Les marches fermiers" the farmers markets are everywhere, vegetables, herbs, mushrooms, berries, fruit are showing up at their peak one after one following the season, freshly harvested. Look for local farmers at the markets to discover produce that has been picked that morning. You can taste the difference during spring, summer and fall with freshly harvested produce from a Colorado organic farm. Choose carefully & wisely, If you are wondering about how to cook with fresh herbs, a mushroom or what accompaniment will be good with a vegetable or a fruit—talk with the farmers, they are extremely knowledgeable about their crops, they are wonderful and passionate people that work very hard to bring you their best, I and other Chefs will team up with organic and natural farmers and work with them to bring you the best. It's important for me to support our local farmers and local businesses who care about quality and the environment—you can make a difference every day, I know I will. Markets are the heartbeat of a community. When I'm traveling the first thing I want to do is to find a market place, It's a great way to discover and learn about the people, find local food vendors, enjoy a taste of the region and experience a vibrant and colorful scene.
